Situated about 20 miles away, Corvallis is generally associated with Oregon State University; however, it is generally overlooked for one key aspect: its culinary attraction. Not only does Corvallis offer a vast choice of brew pubs, other bars and a wide range of coffee shops; but it is also home to the most savory Mexican food known to the Willamette Valley. Located on Ninth Street, El Sol de Mexico is definitely worth the effort required to drive to Corvallis.

Despite food good enough to die for, the ambiance also contributes to making this restaurant utterly fabulous. The colorful exterior sparks an insatiable curiosity which refuses to be denied; once viewed, there is nothing left to do but wander inside. After walking inside, the interior does not disappoint the eyes. Festively bright, the interior incorporates murals, stucco, fireplaces and wonderful mood with Latin music.

One of the best things about El Sol is the superb service. There is little-to-no wait on seating; chips and salsa are both brought to the table practically before one has had a chance to take in the setting. However, not only is the service incredibly speedy, it is also friendly. The employees make this restaurant as much of an attraction as the food.

El Sol offers a vast menu incorporating traditional Mexican food and a wide range of choices: there is something for practically everyone. The menu also comes equipped with brilliant descriptions of the food, as well as photos of select dishes that entice the senses.

One delectable choice is an oldie but a goodie: the taco salad. The Taco Salad Cazuela comes served in a deep fried tortilla dish, and then incorporates layers of beans, lettuce, tomatoes and cheese, along with a choice of meat. Meat choices involve chicken, ground beef, shredded beef or shredded pork. Sour cream and guacamole can be added as well. The ingredients taste offers a testament to their freshness. This delectable dish incorporates all the same flavors of a taco that can be eaten with a fork.

For a more traditional favorite a serving of molcajete may be in order. This dish comes served in a bowl with a side of beans and rice, along with tortillas. Molcajete is a “delicious bowl of chicken and beef slices sautéed with mushrooms, onions, tomatoes, and mild sauce. [It is] topped with cheese, avocado and green onions.” It offers a nice alternative to enchiladas or even the ever-popular burrito.

These dishes are not the only gift El Sol has to offer, however. After the main course the dessert is the gift that keeps on giving. Sopapillas offer a milder sweet treat, while traditional Mexican custard, also known as Flan, is divine. The flavor of both of these dishes tickles the taste buds and leaves a deep yearning for more.

The most distinctive feature of El Sol is definitely the food. Unlike many Mexican restaurants the food is not greasy even in the slightest and packs more of a flavor punch than encountered in many other Mexican restaurants.

With service that is both incredibly fast and friendly, as well as food that is good enough to dream about, El Sol de Mexico is definitely worth the drive to Corvallis.
